100% Home-made Run by Pascal VOLLET, pastrycook for 34 years, and his wife Caroline. She has a degree in catering and has worked in high-class establishments in Paris, Menton, Grasse and Monaco. They set up in Parthenay 14 years ago and her experiences in Michelin starred restaurants has enabled her to respond positively and creatively to the demands of every client no matter how far-fetched! Pascal makes every stage of his cakes and pastries himself from beginning to end, finishing with the almond paste! He loves his food to taste special and so uses only fresh fruits and quality ingredients like Pamplie butter and local flour. He is also one of the few pastrycooks (there are only 3 or 4 in the whole region) who makes a rum baba. Pastries Symbolising Parthenay You will find the shop window colourful and packed with mouth-watering delicacies, which change with the seasons. "I take traditional pastry recipes and change them to make my own specialities, some of which have a local connection, like the 'Saint-Jacques' a dessert made with chocolate, caramel, orange and walnuts decorated with a picture of the Saint Jacques tower sifted onto almond paste. The 'Broyé de Poitou' cake, made in various shapes has the head of a Parthenay bull moulded into it". We were awarded gold in 2014 and bronze in 2015 for our brioche. Silver in 2014 and gold in 2015 for the Broyé de Poitou. This was in the Poitou-Charentes regional competition.
